[pee-noh-TAHJ] A South African red wine grape which is a cross of Pinot Noir and Cinsaut (which the South Africans call Hermitage, thus the derived name Pinotage).
When serving Dessert Wines, make sure the temperature is correct. Serve Late Harvest Rieslings, Sauternes, Muscats, and Ice Wines chilled. Serve Ports, Madeira, and Sherry at cool room temperature.
