Wine Review: The Best Selling Champagne in America for a good reason! This extra-dry (translated to mean slightly sweet) has a medium depth of color with hues of yellow and bronze. The nose features many different delicate aromatics of biscuits, pear, melon, peach, mineral, floral and nutty notes all elegantly intertwined. The palate features a nice, luxurious mousse that is well balanced by the pleasant flavors that mimic the aromas of the nose. Clean and precise, with lime notes and white peach, the finish is fresh and citrusy and will leave your mouth watering for more. This Champagne is one of my favorite choices with all types of sushi as it can hold its own with many different flavors including pickled ginger and moderate amounts of wasabi. - Kara

Winemaker Notes: The flagship of Moët & Chandon, White Star is the most accomplished and universal expression of its style. It reflects the diversity and complementarities of the three champagne grapes and the richness of the region’s best vineyards to reveal the magic of the world’s most loved champagne. Lively and generous White Star distinguishes itself by a bright fruitiness, a seductive palate and an elegant maturity, that continually seduces and delight. White Star is an extremely accomplished assemblage of over 120 crus, in which the Pinots predominate for intensity and structure (35% to 40% Pinot Noir, 45% to 50% Pinot Meunier) with a hint (10%) of Chardonnay for freshness. The use of 30% of carefully selected reserve wines complete the assemblage and enhance its harmony, complexity and consistency. The colour is an elegant golden straw yellow with amber highlights. Its aromas are radiant, revealing bright yellow-fleshed fruits (apple, pear, yellow peach), honey, floral nuances (lime blossom) and elegant blond notes (brioche and fresh nuts). The palate is seductive, richly flavourful and smooth combining generosity and subtlety, fullness and vigour, followed by a delicately fresh crispiness (fruit with seeds), to reveal the magical balance of champagne. White Star can be served as a prelude to dinner and all the way through to dessert. It is perfect with sushi and dumplings, shellfish and fish in light sauces, poached, roasted, or lightly sauced white meats, and fresh fruit salads that are not too sweet.
