Wine Review: This slightly opaque and dark purple colored Cabernet Sauvignon based blend opens with a fragrant blackberry bouquet with hints of leather and black cherry. On the palate, this wine is full bodied, balanced and rich. The flavor profile is a tasty concentrated blueberry with notes of mild minerality and plum. I also detected hints of faint oak and a touch of boysenberry. The finish is dry and its ripe flavors and well-managed moderate tannins are nicely prolonged. This Cab would pair perfectly with slow cooked short ribs. Enjoy – Ken

Winemaker Notes: Our 2014 Vaca displays wonderfully dense, layered aromas of ripe boysenberry, blackberry, blackcurrant, black fig and dark plum, with whiffs of loam, savory dried herbs and sweet oak. The sumptuous, deeply concentrated palate delivers plush, mouth-filling flavors of boysenberry, blackberry, black cherry and black plum supported by ripe, fleshy tannins and culminating in a long, harmonious finish featuring bright fruit, spice and mineral tones. This lush, delicious red is hard to resist now, but it will handsomely repay 8-10 years of cellaring.
