On the palate, this wine is medium bodied, balanced, and has a dry mouthfeel. The flavor profile is an oak infused tart black cherry with a hint of dusty blueberry. The finish remains very dry and its enormous chewy tannins go on for minutes. This very young and big Cab would benefit from some cellar time. If you can’t resist, decant it and pair it with beef bourguignon or a ribeye.
