Wine Review: This dark ruby colored Cabernet opens with a mild black currant bouquet. On the palate, this wine is full bodied, juicy and very fruit forward. The flavor profile is a blackberry and black currant blend with some integrated mild oak. The finish is dry and its big dusty oak tannins are rather sticky and linger for quite some time. This wine would pair well with a juicy cowboy ribeye steak. Enjoy – Ken

Winemaker Notes: The 2008 Corley Reserve Cabernet Sauvignon has deep rich and dark aromas of black and red berry fruit. The oak is beautifully integrated on the nose and reveals wonderful tones of mocha, toasted vanilla and smoky chocolate. On the palate, the wine has a rich texture with lots of depth and concentration. The mid-palate is big and full, being framed by rich tannins that provide definition. The finish is long and lingering. This is a big wine that will reward both the avid decanter and patient ager.

Clinking Glasses Before Tasting Wine: Originates from medieval times. Milk was often spoiled, water was often polluted. Wine was usually safe. The host would drink the wine first and then clink glasses with guests to show the wine was good and safe for drinking.
