Wine Review: This pitch black colored Cabernet Sauvignon from Napa Valley opens with an attractive black currant bouquet with hints of dark chocolate and blueberry. On the palate, this wine is medium bodied, balanced and very fruit forward. The flavor profile is a tasty black cherry with notes of integrated gritty minerality and blueberry. I also detected hints of cedar and blackberry. The finish is dry and it rather dusty tannins build up and last for quite some time. I would decant this wine and serve it with Italian rolled Braciole. Winemaker Notes: The Oso Vineyard provides the central character and structure of the wine, while the balance of the grapes from the valley floor contribute roundness and complexity. Emblem Napa Valley Cabernet Sauvignon is lovely and displays seamless texture. Malolactic fermentation in barrel, combined with 18 months aging in French oak (66% new), further concentrated the wine’s rich cassis and blackberry cobbler flavors, adding subtle nuances of torched creme brulee.
