Wine Review: This almost clear colored Sparkling wine with very tiny bubbles opens with an appealing red apple and dried pineapple bouquet with hints of faint mango and wet limestone. On the palate, this wine is light to medium bodied and slightly acidic. The flavor profile is a tasty light lime with notes of minerality and apple. We also detected hints of honeydew melon and vanilla oak as well. The finish is dry and its flavors and acidity are nicely prolonged. The Panel suggested pairing this very good Sparkler with pan-seared scallops. Enjoy - KWGTP

Winemaker Notes: Opens up with an enticing orange blossom bouquet, lively bubble trails and fine mousse. On the palate, the wine is creamy, clean and refreshing. Flavors of Granny Smith apples, lemongrass, brioche and vanilla creme resolve with lively mineral notes into a well-balanced finish. This sparkling wine pairs well with seared scallops, baked halibut, and fresh oysters. For cheese, pair alongside a rich Brie or soft goat cheese.
