Wine Review: This very dark purple colored Cabernet Sauvignon from Napa is a Big Boy. It opens with a black currant and blackberry bouquet. On the palate, this wine is full bodied, slightly acidic and juicy. The flavor profile is a rich black currant and ripe blackberry blend with hints of minerality and mild oak. I also detected hints boysenberry in the background as well. The finish is very dry and its bold dusty tannins are very sticky and build up well after the wine is gone. This Cabernet will benefit from patience and time. It is a prime candidate to jump to the next level in 3-5 years. If you can’t wait, decant it and serve it with a well marbled ribeye. Enjoy - Ken
