Wine Review: This opaque very dark ruby colored wine opens with a mild black raspberry bouquet with a whiff of anise. On the palate, this wine is full bodied, very well balanced, smooth, and elegant. The flavor profile is a very tasty blend of black raspberry, blueberry, and integrated oak. There is also touch of cedar, spice, and black pepper as well. The finish is dry and its well managed moderate tannins are tingly and nicely prolonged. This Cab is a terrific deal and shows very nice finesse. It would pair well with a New York strip steak. Winemaker Notes: This Cabernet has distinct flavors of black currant, blackberry, blueberry and cassis with enticing aromas of mocha and nutmeg. Notes of smoke, cedar and tobacco leaf round out the lingering finish. - Randy Ullom, Winemaster

Clinking Glasses Before Tasting Wine: Originates from medieval times. Milk was often spoiled, water was often polluted. Wine was usually safe. The host would drink the wine first and then clink glasses with guests to show the wine was good and safe for drinking.
