Wine Review: This Merlot from Once & Future recently won our blind tasting. It was midnight black colored and opens with a cherry and oak bouquet with a hint of licorice and crispy bacon. On the palate, this wine is full bodied, nicely balanced, fresh and juicy. The flavor profile is a tasty cherry and plum blend with notes of gentle oak and mocha. We also detected hints of rosemary and rhubarb. It wonderful finish is dry and its flavors and mild tannins are nicely prolonged. The Panel suggested pairing this Merlot with roast pork. Winemaker Notes: Rich fruit, herb, vanilla, and cedar notes lead seamlessly into the lush velvety texture and full cherry berry fruit flavors, accented with hints of tar and mineral. Delicious to drink in the near term, the ripe tannins and bright acidity promise flavor development over the next decade or more.
