2007 Pax Wines Syrah & Shiraz (Other than French) "Obsidian"![]() Winery: Pax Wines Vintage: 2007 Wine Name/Vineyard: "Obsidian" Wine Category: Syrah & Shiraz (Other than French) Grape blend: 100% Syrah Region: Knights Valley State or country: CA Price: $75 Cases produced: 375 KWG Score: 93.5 (based on 2 reviews) Ken's Wine Rating: Very Good+ (93) Review date: September 12, 2009 Wine Review: This Syrah from Pax is very very dark purple in color. It opens with a shy mild blueberry bouquet. On the palate, this wine is full bodied, very well balanced, and smooth. The flavor profile is a savory mild spicy blueberry with hints of blackberry in the background. The finish is quite dry and its very noticeable tannins are extremely persistent and long lasting. This baby of a wine is an infant and still needs time, maybe years to develop. Once it opens, I fully anticipate this wine to be even better. However, if you are impatient, serve it with a thick cut grilled NY strip steak.
