Wine Review: This pitch black colored Cabernet from Pina is the best offering that we have covered from the "D'Adamo Vineyard." It opens with a mild black currant bouquet. On the palate, this wine is medium bodied, well balanced, and very smooth. The flavor profile is a delicious mild black currant with perfectly integrated oak. There are notes of black pepper and a hint of anise and blackberry as well. The finish is dry and its fine tannins are well managed and fade away nicely. This wine is a perfect steak wine. Go to your favorite steak restaurant and order a dry aged ribeye and enjoy - Ken

Winemaker Notes: The 2008 D'Adamo Vineyard Cabernet Sauvignon possesses unctuous aromas of black cherry and black currant intermixed with huckleberry compote and dark chocolate. The wine coats the palate with ripe fruit and subtle toasty oak and exhibits a lasting finish.

Clinking Glasses Before Tasting Wine: Originates from medieval times. Milk was often spoiled, water was often polluted. Wine was usually safe. The host would drink the wine first and then clink glasses with guests to show the wine was good and safe for drinking.
