Wine Review: This very dark ruby colored Cabernet from Tom Eddy opens with a mild black cherry bouquet with a hint of menthol, cinnamon, and cedar. On the palate, this wine is medium bodied, balanced, and smooth. The flavor profile is a gentle black cherry with notes of blackberry and a hint of dark chocolate, espresso, and oak. The finish is dry and its tannins are well managed. The panel suggested serving this fine Cab with Colorado lamb chops or a filet with bearnaise sauce. Enjoy – KWGTP

Winemaker Notes: The 2006 Tom Eddy Mt. Veeder Cabernet Sauvignon comes from a special vineyard located in the prestigious hillsides of the Mt. Veeder AVA. The grapes all derive from a single, small block of the vineyard making the wine a great representation of this region's uniquely special terroir. The wine epitomizes what Napa Valley mountain Cab is all about, with rich flavors of dark berries and a velvety but firm structure. The wine was aged in the finest new French Oak barrels to add a subtle hint of vanilla and spice to round out the wine's complexity and confirm its luscious and enticing character. The wine is approachable now but should age brilliantly for the next 10 to 20 years. Cheers!
