Wine Review: This opaque and very dark purple colored wine opens with a fragrant boysenberry bouquet with hints of blueberry and plum. On the palate, this wine is medium bodied and fruit forward. The flavor profile is a ripe black raspberry with notes of plum. I also detected hints of black pepper, boysenberry and mild oak. The finish is dry and its mild tannins are a tad sticky and linger for a while after the wine is gone. This wine would pair nicely with a slow cooked Memphis styled barbecue pulled pork. Enjoy - Ken

Winemaker Notes: The 2008 Elodian Cabernet Sauvignon possesses a rich aroma of dried cherries, black olive and fennel. The wine was aged in 50% new French Oak which contributes a subtle vanilla and cedar quality to both the aroma as well as on the palate. The fully extracted tannins are mouth-filling yet approachable and the finish is clean and lingering. The pervasive aftertaste is complex and leaves red raspberry, black cherry and vanilla bean flavors on the palate. The bright acidity and powerful structure of this wine make it a great food wine ready to accompany a big steak or perhaps some pasta with marinara. Drink this wine now or lay it down for a decade or two and watch it evolve!
