Wine Review: This is a really nice Grand Cru Beaujolais from the Moulin a Vent region. It opens with an acai and blueberry bouquet with a hint of blackberry. On the palate, this wine is medium bodied, slightly acidic, and displays a soft, round mouthfeel. The flavor profile is a tasty Acai with notes of blackberry. I also detected a touch of red currant, minerality and old oak. The finish is dry and its dusty tannins are a bit sticky and linger nicely. This wine would pair nicely with beef bourguignon. What is Chicken St. Timothy?
Large cubes of chicken breast that are dipped in egg wash and then drenched in flour. Then saute the chicken with sliced mushrooms in a stick of butter. Once the flour absorbs the butter, add plenty of Chardonnay, and diced scallions. Finish off the dish with heavy cream. Serve hot and enjoy! It’s delicious!
