Jeremiah is the Director of Winemaking at <a href=\"https:\/\/paulhobbswinery.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Paul Hobbs Winery<\/strong><\/a>. We covered seven wines during the visit. We started with two Paul Hobbs Chardonnays from the 2023 vintage. Then we covered two 2023 Paul Hobbs Pinot Noirs. We then had a 2023 Paul Hobbs Cabernet Sauvignon from \u201cCoombsville.\u201d After that we wrapped up the interview and tasting by covering both 2023 Cabernet Sauvignon\u2019s from their Crossbarn project. It was another great tasting! In this post, you can learn what we learned about Jeremiah, the history of the winery, and read our reviews of all of these impressive wines.<\/span><\/p>\n<p><span style=\"color: #000000;\">Before we get to the wines, I thought I would share some tidbits that Jeremiah shared in the interview.<\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">Tell us a little bit about the <a href=\"https:\/\/paulhobbswinery.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Paul Hobbs Winery<\/strong><\/a> history?<\/span>\n<ul>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/paulhobbswinery.com\/wp-content\/uploads\/2025\/08\/ph-bio.pdf\" target=\"_blank\" rel=\"noopener\"><strong>Paul Hobbs<\/strong><\/a> is a fourth-generation farmer.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Paul was eventually guided by his upbringing on a farm in western New York.<\/span><\/li>\n<li><span style=\"color: #000000;\">But he never really intended to go into farming or winemaking. He went to Notre Dame to become a doctor. He was pre-med and received BS in Chemistry from there in 1975.<\/span><\/li>\n<li><span style=\"color: #000000;\">At the encouragement of his father, he attended UC Davis graduate school. While there he was inspired by his professors and his enology studies which led him down a path into wine.<\/span><\/li>\n<li><span style=\"color: #000000;\">He also traveled to Europe which also inspired his curiosity in wine.<\/span><\/li>\n<li><span style=\"color: #000000;\">He worked at Robert Mondavi and was on the inaugural winemaking team in 1979 for Opus One.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">He worked for 7 years at Mondavi.<\/span><\/li>\n<li><span style=\"color: #000000;\">He worked for 6 years at Opus One.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">In 1988, midway thru his career at Simi winery, he went to Chile on a trip. Because of some circumstances with his guest from Argentina. He had to leave and ended up in Argentina. This was the beginning of his interest in that country for wine.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/www.kenswineguide.com\/blog\/wp-content\/uploads\/2026\/05\/Paul-Hobbs-Production-Facility.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-2746\" src=\"https:\/\/www.kenswineguide.com\/blog\/wp-content\/uploads\/2026\/05\/Paul-Hobbs-Production-Facility.gif\" alt=\"Paul Hobbs Production Facility\" width=\"350\" height=\"222\" \/><\/a>In 1991 Paul started Paul Hobbs Winery<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Paul is a risk taker.<\/span><\/li>\n<li><span style=\"color: #000000;\">He pushes his team to take risks.<\/span><\/li>\n<li><span style=\"color: #000000;\">The winery and vineyard sites are an important part of their current philosophy.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Over the years, they have moved to lower use of herbicides and pesticides.<\/span><\/li>\n<li><span style=\"color: #000000;\">They have also moved to using more \u201cEstate\u201d vineyards.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Paul started his exploration of making wine in Argentina in 1991.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">He made his first Argentinian wines in 1992 under the Alamos label.<\/span><\/li>\n<li><span style=\"color: #000000;\">He thought Malbec had a lot of potential there.<\/span><\/li>\n<li><span style=\"color: #000000;\">In 1998 he started <a href=\"https:\/\/vinacobos.com\/en-us\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Vina Cobos <\/u><\/strong><\/a>Winery in Argentina<\/span>\n<ul>\n<li><span style=\"color: #000000;\">He did a lot to raise the quality of the vineyards and the grapes there.<\/span><\/li>\n<li><span style=\"color: #000000;\">He now goes there 3 to 4 times per year supporting this project.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Meanwhile back in California he started <a href=\"https:\/\/www.crossbarn.com\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Crossbarn<\/u><\/strong><\/a> in 2000.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">This is a second label for their appellation wines.<\/span><\/li>\n<li><span style=\"color: #000000;\">They make Chardonnay, Pinot Noir, and Cabernet Sauvignon under this label.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/www.kenswineguide.com\/blog\/wp-content\/uploads\/2026\/05\/Paul-Hobbs-Amid-Production.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-2749\" src=\"https:\/\/www.kenswineguide.com\/blog\/wp-content\/uploads\/2026\/05\/Paul-Hobbs-Amid-Production.gif\" alt=\"Paul Hobbs Amid Production\" width=\"350\" height=\"276\" \/><\/a>Today Paul is the owner, vintner, and partner for seven wineries around the world.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">He does quarterly tours to support and consult on these projects.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">As noted above he has Paul Hobbs and Crossbarn in Sebastopol, California.<\/span><\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/www.hillickandhobbs.com\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Hillick &amp; Hobbs<\/u><\/strong><\/a> in the Finger Lakes in New York.<\/span><\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/vinacobos.com\/en-us\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Vi\u00f1a Cobos<\/u><\/strong><\/a> in Mendoza, Argentina.<\/span><\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/www.crocuswines.com\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Crocus<\/u><\/strong><\/a> in Cahors, France.<\/span><\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/www.yacoubianhobbs.com\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Yacoubian-Hobbs<\/u><\/strong><\/a> in Vayots Dzor, Armenia.<\/span><\/li>\n<li><span style=\"color: #000000;\"><a href=\"https:\/\/www.alvaredoshobbs.com\/\" target=\"_blank\" rel=\"noopener\"><strong><u>Alvaredos-Hobbs<\/u><\/strong><\/a> in Galicia, Spain.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Tell us about Jeremiah Timm and your background and how you made it to the Paul Hobbs winery?<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Jeremiah grew up in Wisconsin.<\/span><\/li>\n<li><span style=\"color: #000000;\">His wine industry roots run deep, starting in the industry at the age of 17 as a vineyard and cellar worker at <a href=\"https:\/\/www.wollersheim.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Wollersheim Winery<\/strong><\/a> in Prairie du Sac.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">He continued to work at Wollersheim Winery during school breaks.<\/span><\/li>\n<li><span style=\"color: #000000;\">He worked there for 8 years.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">He got his Bachelor of Science degree in Enology from Fresno State University in California.<\/span><\/li>\n<li><span style=\"color: #000000;\">After graduation he decided to permanently move to California.<\/span><\/li>\n<li><span style=\"color: #000000;\">He started at Kosta Browne as an intern in 2008.<\/span><\/li>\n<li><span style=\"color: #000000;\">He became the enologist at Moshin for 1.5 years.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">They made their wine via a custom crush facility.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">He then returned to Kosta Browne from 2010 to 2017.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">While there he went from Enologist to Assistant Winemaker to eventually Director of Winemaking Operations.<\/span><\/li>\n<li><span style=\"color: #000000;\">He was part of the crew that built the winery.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">From there he spent a year at Frank Family from June 2017 to June 2018.<\/span><\/li>\n<li><span style=\"color: #000000;\">From 2018 to 2022 he joined Michael Browne and built CIRQ and CHEV.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Like at KB, they built the winery from the ground up.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">He started with Pauk Hobbs in 2024.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Jeremiah works closely with Paul to oversee all aspects of the laboratory and cellars, including fermentation, aging, and bottling.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">So, tell us about these wines which come from the 2023 vintage?<\/span>\n<ul>\n<li><span style=\"color: #000000;\">2023 was a cooler vintage and most grapes came in 2-4 weeks later than normal.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Tell us about the Appellations and Vineyards you use?<\/span>\n<ul>\n<li><span style=\"color: #000000;\">They like to focus and emphasize AVA\u2019s.<\/span><\/li>\n<li><span style=\"color: #000000;\">West Sonoma Coast is a new Appellation wine for them. They started in 2022.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">A group of vineyards owners pushed for this new appellation as it is very distinct and different than the massive Sonoma Coast appellation.<\/span><\/li>\n<li><span style=\"color: #000000;\">Their vineyard source is all \u201cEstate\u201d fruit.<\/span><\/li>\n<li><span style=\"color: #000000;\">It provides both Chardonnay and Pinot Noir.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">They have recently added more acres of Chardonnay.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Russian River Valley.<\/span>\n<ul>\n<li><span style=\"color: #000000;\">The Chardonnay is sourced from five vineyards. Four \u201cEstate\u201d vineyards and one long term grower vineyard.<\/span><\/li>\n<li><span style=\"color: #000000;\">The Pinot Noir is a majority of \u201cEstate\u201d fruit.<\/span><\/li>\n<li><span style=\"color: #000000;\">They have their own crew work the vineyards.<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Coombsville<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Used to be their Napa Valley Cabernet.<\/span><\/li>\n<li><span style=\"color: #000000;\">It is mainly \u201cEstate\u201d fruit from a large vineyard. A small % comes from a grower vineyard.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"color: #000000;\">Tell us a little bit about <a href=\"https:\/\/www.crossbarn.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Crossbarn<\/strong><\/a>?<\/span>\n<ul>\n<li><span style=\"color: #000000;\">Another winemaker makes the wines day to day.<\/span><\/li>\n<li><span style=\"color: #000000;\">Jeremiah oversea all facets of the project.<\/span><\/li>\n<li><span style=\"color: #000000;\">He is involved in the blending process.<\/span><\/li>\n<li><span style=\"color: #000000;\">The \u201cAlexander Valley\u201d Cabernet is from one vineyard.
