Stu's Steak Appetizer Recipe

"Stu's Steak Appetizer Recipe" - Crostini with caramelized onions and steak

Ingredients:

1 loaf French bread.
1 - 1.5 lb. beef tenderloin/filet mignon. (can also use sirloin)
2 medium onions; sliced thin and caramelized
6 oz. shredded mozzarella cheese (can substitute for bleu cheese like gorgonzola)
½ cup olive oil and spice mixture*
¼ cup balsamic vinegar

Preparation:

Sprinkle the steak with salt/pepper to taste or with Montreal Steak seasoning.
Grill the steak rare to medium rare and set aside.
Slice the onions and caramelize using a non-stick skillet.
Slice the French load into ¼ inch slices.
Lightly brush each slice with olive oil mixture.
Place slices on cookie sheet and bake on 300 F degree oven for 8-10 minutes. Remove from oven and
set aside. (Can be made in up to 1 day in advance and stored in airtight container)
Place small amount of caramelized onions on each slice of crostini.
Slice steak into bite-sized pieces and place on top of onions.
Sprinkle with shredded mozzarella
Bake in over on 300 for 8-10 minutes or until cheese has melted.
Serve immediately

*Olive oil mixture
½ cup olive oil
¼ cup balsamic vinegar
¼ tsp salt
¼ tsp paprika
black pepper to taste
¼ tsp cayenne pepper
1 tsp dried thyme
1 tsp dried rosemary
Whisk all ingredients in a small bowl
