Theresa’s Meatloaf Recipe

Ingredients:

1 ½ lbs ground beef (90%)
½ cup Italian bread crumbs
½ cup uncooked oatmeal (Quaker Oats)
½ cup Ketchup
½ cup skim milk
2 TBSP soy sauce
1 large onion, chopped (about 1 cup)
1 egg
Generous grating of black pepper

Preparation:

Preheat oven to 350. In a large bowl, thoroughly combine all ingredients. Place mixture in a 9 x 5” loaf pan coated with nonstick cooking spray. Bake until internal temp is at least 160 degrees, I cook it 1 ¼ hours. (If you don’t have a meat thermometer, toward the end of cooking time, cut a slit in the middle and cook until juices run clear-not-pink and meat has lost its pink or reddish color). If using less than 90% ground beef, drain grease 2-3 times during cooking process.
