Wine Review: Retrospective Tasting: This deep purple colored Cabernet Sauvignon from DAOU is incredibly impressive given its age. It opens with a black currant and mocha bouquet with a hint of tea, toasted oak, and black licorice. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced, smooth, rich, and very youthful. The flavor profile is a concentrated blackberry and graphite blend with notes of black plum, cassis, and chalky minerality. We also detected hints of menthol, black licorice, and dark chocolate. The finish is dry and moderate tannins are integrated and supple and very nicely sustained. The longer this wine is open, the better it gets. The Tasting Panel would pair this Cab with Stuart's beef wellington or a porterhouse steak. Enjoy – KWGTP
