Wine Review: This deep purple colored Cabernet Sauvignon from DAOU opens with a fragrant blackberry and graphite bouquet with hints of black currant, cigar box and menthol. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is fruit forward, round, bright and savory. The flavor profile is extracted blackberry and black currant blend with notes of black licorice and black tea. We also detected some hints of clove, cedar, and graphite. The finish is dry, and its fruit flavors and very dusty tannins stick around for quite some time. The Tasting Panel would decant this Cab before painting it with a messy rack of ribs or with braised short ribs. Enjoy – KWGTP

Winemaker Notes: The 2021 "Cuvee Katherine" is an innovative masterwork from Winemaker Daniel Daou. A deep garnet color leads to aromas of dark cherry, plum, currant, and sage with hints of tobacco and bay leaf. The palate is sumptuous and expansive with flavors of muddled blackberry, black currant, chocolate-covered cherry and licorice. Bright tannins and fresh acidity converge on a remarkably long finish.
