Wine Review: This very deep ruby colored Cabernet Sauvignon from DAOU opens with blackberry, menthol, and cigar box bouquet with hints of cured meat and pine pitch. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, smooth, and bold. The flavor profile is dark chocolate and black currant blend with notes wild Maine blueberry pie. We also detected hints of flint and toasted coconut. The finish is dry and its fine grain tannins build-up and linger for quite some time. The Tasting Panel would decant this Cab before pairing it with a porterhouse steak. We also think this Cab can be enjoyed on its own as well. Enjoy – KWGTP

Winemaker Notes: The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Opulent textures expand across the palate with flavors of red fruit, blueberry, and chocolate-covered raspberry. The overall experience is fresh and rich, concluding with velvety tannins and impressive length.
