Wine Review: This pale yellow colored sparkler display medium sized bubbles. It opens with a wet stone and dough like bouquet. On the palate, this wine is medium bodied, balanced, and pleasant. The flavor profile is mineral infused gentle lime with a hint of white pepper. The finish is quite dry and refreshing. This is a pleasant entry level sparkler. Enjoy – Ken

Winemaker Notes: Sparkling wine is a wonderful yet often overlooked accompaniment to food. Bright acidity and effervescence cleanses the palate, while the delicate flavors complement a wide array of dishes. Brut pairs very well with Japanese cuisine, my favorite is with sashimi.
