Wine Review: This pale yellow colored ice wine opens with a very attractive apricot bouquet. On the palate, this wine is full bodied, well balanced, and rich. The flavor profile is a concentrated apricot. It was delicious. The finish is sweet and lingers slightly. This dessert wine would pair perfectly with green apples and sharp cheddar cheese. Winemaker Notes: The 2007 Eiswein has densely packed pear, apple and guava fruit, with an intense, nervy edge in the aroma. It has a luscious silkiness on the palate that is viscous and juicy, with the vintage’s typically bright acidity giving it a crisp, dynamic finish.
