Wine Review: This pale straw colored dry-styled Riesling from Dr. Pauly is impressive and an excellent value. It opens with a faint bee’s wax and wet slate like bouquet with hints of peach and green apple. On the palate, this wine is light to medium bodied, nicely balanced, soft and delicate. The flavor profile is a delicious mild Anjou pear with notes of lemon-lime and hints of green apple and faint minerality. The finish is dry and its flavors fade away nicely. A top finisher in our recent blind tasting, it was described a lip smacking good. The panel suggested pairing this gem with Stuart’s scallops with Brussel sprouts or something from the raw bar. Winemaker Notes: The Dry Riesling from Dr. Pauly-Bergweiler has a refreshing and irrepressible aroma that exudes significant power, emerging with the bouquet of violets when exposed to air. The taste is marked by a distinctive acidity. It is an ideal partner for any kind of fish. Try it with Dover sole or pike.
