Wine Review: This very dark ruby colored Cabernet Sauvignon based blend from Podere Sapaio opens with a pipe tobacco and mild cantaloupe bouquet with hints of leather, dark cherry, and mint. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, round, and bright. The flavor profile is cedar influenced red plum and red licorice blend with notes of green olive. We also detected some hints of cinnamon tea. The finish is dry and its refined dusty tannins build-up and stick around for a while. The Tasting Panel would pair this Cab blend with grandma's sausage lasagna or with blackened tuna.
