Wine Review: This slightly cloudy and dark ruby colored Cabernet Sauvignon based blend opens with a black currant and black cherry bouquet with hints of cinnamon and clove. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is nicely balanced, smooth, and solid. The flavor profile is a tasty red plum and mocha blend with notes of cedar and menthol. I also detected hints of red currant and cinnamon. The finish is dry, and its well-managed moderate tannins are very nicely prolonged. This red blend would pair very nicely with a king cut prime rib. Enjoy – Ken

Winemaker Notes: The 2018 Symmetry has luxurious aromas of red fruit, plum, vanilla, dusty oak and dried fruit which unfold on the palate with silky layers of dark fruits, baking spices and a supple, rich mouthfeel. This wine is harmonious and elegant with refined tannins and a long, lingering finish. Enjoy this wine now with beef stew, grilled pork tenderloin or an assortment of roasted vegetables, or cellar for enjoyment for years to come.
