Wine Review: This pale straw colored sparkling wine with streaming tiny bubbles is very good. It opens with a very doughy bouquet with hints of bosc pear and baked apple. On the palate, this wine is medium bodied, balanced and round. The flavor profile is a mineral infused bread toast with notes of walnut and caramelized apples and a touch of honey. The finish is dry and shows nice length. The Panel suggested pairing this very nice sparkling wine with toasted ravioli or tilapia with an orange beurre blanc sauce with roasted Brussel sprouts.
