Wine Review: I tried this wine last spring and it had great potential, but it was just not ready. Well, it is ready now and it will be for years to come. This very dark ruby colored wine is impressive. It opens with a very inviting cherry and blackberry bouquet. On the palate, this Cab is full bodied, balanced, and fruit forward. The flavor profile is a very spicy black cherry with noticeable notes of black pepper. The finish is quite dry and its substantial tannins stick with you for quite a while. As you can see from the description, this wine is just beginning to emerge. In the near term decant this gem and serve it with a ribeye steak. However, if you decide to cellar it, I also believe it will perform quite well long term. It certainly has plenty of fruit and tannins for the long haul. Enjoy - Ken

Winemaker Notes: The 2003 Tom Eddy Cabernet Sauvignon is an adventure for the palate. Layers of classic Cabernet flavors are woven together with rich subtlety allowing for the discovery of distinct characteristics with every sip. Chocolate covered cherries and anise strike first with overlapping flavors of velvety cassis that pummels the palate leaving delicate hints of cedar and spicy clove to linger on the finish. However, you may be waiting a while for this wine's flavor to cease as it leaves an impossibly long elegance in your mouth to enjoy long after the sipping is done.
