Wine Review: This midnight purple colored Cabernet Sauvignon from Pasterick is opaque and slight cloudy. It opens with a black currant and black licorice bouquet. On the palate, this wine is medium-plus bodied with plus acidity. It is also fruit forward. The flavor profile is black licorice and blackberry blend with notes of black currant, oak, purple grape popsicle and black pepper spice. The finish is dry and its moderate tannins stick around for quite some time. I would pair this Cab with a New York strip steak. Enjoy – Ken

Winemaker Notes: Pasterick's latest addition to our repertoire is this elegant Cabernet, which we blended with 5% of our estate Syrah. You will experience the perfume of crushed blueberries, black currants, blackberry, cassis and hints of vanilla generously developed with sweet refined and spicy fruit. This "Hermitaged" Cabernet can be served with classic meats such as veal, pork, lamb duck, game and roasted chicken. Truly an expression of Dry Creek Cabernet Sauvignon at its finest.
