Wine Review: This opaque and deep garnet colored Merlot based wine from Lasseter opens with a shy blackberry and black cherry bouquet with hints of leather and black licorice. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced, smooth, lush, and fresh with nice tension. The flavor profile is a blackberry and black licorice blend with notes of graphite and huckleberry. We also detected hints of oolong tea, oak, and black pepper. The finish is dry, and its flavors, acidity, and well-managed fine-grained tannins drift away nicely. We would pair this red blend with a grilled hanger steak. Enjoy - KWGTP

Winemaker Notes: Winemaking is an art form to us. Our inaugural wine is Paysage, French for countryside, or landscape painting, and it reflects our love of the art of blending for harmony, whether in colors or in this case aromas and flavors. With Merlot as the lead varietal, our 2021 wine is medium-bodied and approachable. Its pure berry flavors are enhanced by Cabernet Sauvignon and Cabernet Franc for a rich, supple wine with balanced acidity, that pairs beautifully with a wide variety of foods.

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery. We started with a 2023 Chardonnay. Then we tried a 2022 red blend. From there, we covered four Cabernet Sauvignon wines. Those Cabs were from the following vintages: 2018, 2022, 2016, and 2009. It was a terrific portfolio tasting. In this post, you can learn what is new with Cole, learn about the William Cole Winery, and read our reviews of all of these impressive wines.
