Wine Review: This deep ruby colored Zinfandel from Once & Future opens with a blackberry and violet bouquet with hints of pomegranate and pencil shavings. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is smooth, round, fresh, and mouthwatering. The flavor profile is a juicy red plum and red raspberry blend with notes of black pepper and hot cinnamon. We also detected hints of red licorice, pomegranate, and stone dust. The finish is dry, and its flavors, tingly acidity, and dusty tannins linger and are nicely sustained. We would pair this impressive Zin with a New York strip steak or with Colorado lamb chops.
