Wine Review: This translucent and medium red colored Cabernet Franc from Merriam shows a lot of finesse. It opens with a shy black cherry bouquet with hints of cinnamon. On the palate, this wine is medium bodied with medium acidity. The mouthfeel is nicely balanced, delicate, smooth, and seamless. The flavor profile is a red berry and cinnamon blend with notes of tobacco and stone dust. We also detected hints of red plum, vanilla, and cherry. The finish is dry, and its flavors, acidity, and fine mild tannins drift away nicely. We would pair this refined and complimentary Cab Franc with a lightly seared ahi tuna or shrimp tempura.
