Wine Review: This clear and light platinum colored Sauvignon Blanc based blend from Lasseter opens with a pink grapefruit and Mandarin orange bouquet with hints of green apple, lychee, and green herbs. On the palate, this wine is medium minus bodied with plus acidity. The mouthfeel is balanced, round, slightly viscous, and quite zesty. The flavor profile is a stone fruit and quince blend with notes of lime zest and lemon tea. We also detected hints of honeycomb, lychee, and basil. The finish is dry, and its flavors and acidity fade away nicely. We would pair this white blend with baked fish casserole with lemon and parmesan crumbs or with sashimi. Enjoy - KWGTP

Winemaker Notes: We created Voilà out of our love for White Bordeaux Sémillon and Sauvignon Blanc blends. Fermented in neutral French oak barrels and aged ten months on the lees, this is a sumptuous wine with citrus aromas, a refreshing palate of stone fruit, subtle tropical notes, and a long, mineral finish.

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery.
