Wine Review: This clear and very light straw-colored Chardonnay from Trestle Thirty-One in the Finger Lakes is impressive. It will draw more fans from the oak lovers’ side of Chard. It opens with a poached pear and lime zest bouquet with hints of pink lady apple, coconut custard, and green tea. On the palate, this wine is medium plus bodied with fresh acidity. The mouthfeel is balanced, round, bright, and mouthwatering. The flavor profile is an oak and bartlett pear blend with notes of gentle pineapple, lime, and Brach’s butterscotch candy. I also detected hints of vanilla, green tea, and a touch of faint lychee at the very end. The finish is dry, and its flavors and acidity linger and last for quite some time. I would pair this Chard with a toasted Maine-style lobster roll. Enjoy - Ken

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery.
