Wine Review: This midnight purple colored Cabernet Sauvignon from Jambe de Bois opens with a cassis and black olive bouquet with hints of black plum and moist pipe tobacco. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, smooth, plush, and mouthwatering. The flavor profile is a layered blend of mild cassis and graphite with notes of cedar and black plum. We also detected hints of tobacco, green olive, blackberry, and black tea. The finish is dry, and its flavors, acidity, and moderate tannins linger and last for a while. We would pair this complex Cab with Stuart’s beef wellington. Enjoy - KWGTP
