Wine Review: This rich Paso Robles Chardonnay is a light golden yellow color, with aromas of Bartlett pear, white pepper, butterscotch, sea breeze, green herbs, and lime zest. Lush and bright on the palate, it has a medium-plus body with medium-plus acidity. The mouthfeel is round and slightly creamy making it easy drinking. There are flavors of pineapple, lime, saline, mild oak, and toasted almond, along with notes of butterscotch, starfruit, and vanilla creme. The crisp, tangy finish drifts away nicely. Serve with a cold lobster roll with a side of fries. - Mark

Winemaker Notes: The nose opens with butterscotch and lemon zest integrated with subtle oak-derived notes of toast, vanilla, and hazelnut. On the palate, it's creamy yet balanced, offering pineapple, citrus oil, and crème brûlée flavors supported by a vibrant thread of acidity. The finish is long, silky, and subtly nutty, a testament to careful barrel work and patient aging.

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery. We started with a 2023 Chardonnay. Then we tried a 2022 red blend. From there, we covered four Cabernet Sauvignon wines. Those Cabs were from the following vintages: 2018, 2022, 2016, and 2009. It was a terrific portfolio tasting. In this post, you can learn what is new with Cole, learn about the William Cole Winery, and read our reviews of all of these impressive wines.
