Wine Review: This clear and straw colored “Brut” Sparkling Wine from Roederer Estate displays fine tiny streaming bubbles. It opens with a rose petal and faint oolong tea bouquet with hints of bread dough and walnuts. On the palate, this wine is light bodied with integrated medium acidity. The mouthfeel is balanced and round with a pleasant light froth. The flavor profile is an oolong tea and walnut blend with notes of stone dust and poached pear. I also detected hints of bread dough and white pepper. The finish is dry, and its flavors and acidity drift away nicely. I would pair this sparkling wine with broiled scallops. Enjoy - Ken
