Wine Review: This pale salmon colored sparkling Rosé blend from Mendicino County in California has a generous number of streams of tiny bubbles. The bouquet features red cherry, sourdough bread, cranberry, lilacs and baked apple aromas. There is a fresh and generous froth on entry. On the palate, it is medium bodied, moderately acidic, lightly creamy, nicely balanced, and crisp. There are flavors of red raspberry, tart green apple, ginger, and pastry crust with hints of lemon zest and stony minerality. The finish is bright and long. This bubbly is very food friendly, and I would suggest serving it with chilled with oysters on the half shell. - Mark

Winemaker Notes: A touch of Pinot Noir lends both its delicate pale salmon hue and a harmonious depth of flavor. Aromas of fresh raspberry jam and wild strawberries mingle with hints of cream-covered pastry, leading to a palate that is layered, round, and refreshing.
