Wine Review: This midnight purple colored Cabernet Sauvignon from V. Sattui opens with a cassis and dark chocolate bouquet with hints of oak, eucalyptus, and coconut. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, smooth, and approachable. The flavor profile is a marionberry and gentle tobacco blend with notes of cedar and red currant. We also detected hints of coconut, muddled mint, and bay leaf. The finish is dry, and its flavors, acidity, and its moderate tannins show nice length. We would pair this friendly Cab with beef wellington or with beef carpaccio. Enjoy – KWGTP.

Winemaker Notes: From the first pour, this wine makes an impression, showing a deep garnet color and inviting aromas of black cherry, black plum, and a hint of cinnamon spice. The palate is bright and expressive, with layers of raspberry and red currant that unfold into juicy, mouth-filling richness. Nineteen months of aging in 70% new French oak add depth and polish, layering in subtle notes of toasted spice and shaping the wine’s supple texture. Structured yet lively tannins give it lift and definition, leading to a smooth, lingering finish. It’s an ideal companion to hearty grilled fare or comforting, vegetable-forward dishes.

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery. We started with a 2023 Chardonnay. Then we tried a 2022 red blend. From there, we covered four Cabernet Sauvignon wines. Those Cabs were from the following vintages: 2018, 2022, 2016, and 2009. It was a terrific portfolio tasting. In this post, you can learn what is new with Cole, learn about the William Cole Winery, and read our reviews of all of these impressive wines.
