Wine Review: This hazy dark ruby colored Cabernet Sauvignon from Doi Da opens with a black raspberry and cigar box bouquet with hints of blackberry and eucalyptus. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round, and mouthwatering. The flavor profile is a black plum, black tea, and tobacco blend with notes of black cherry and dark chocolate. We also detected hints of blackberry, clove, and oak. The finish is dry, and its flavors, acidity and moderate dusty tannins lingers nicely. We suggest aging this young wine a bit longer. If you can’t wait, decant it in the near term. Then we would pair this Cab with slow cooked beef brisket or a smoked beef tri-tip roast. Enjoy - KWGTP
Winemaker Notes: The 2023 vintage is the second release of the Đồi Dá Napa Valley Cabernet Sauvignon. The wine pops with notes of cranberry, wild blackberry, clove, and tobacco leaf. The wine has fresh flavors on the palate with velvety tannins and a long, elegant finish. The core of fruit is supported by a nice backbone of acidity, keeping the wine light on its feet. Crafted to complement a meal, the wine is ready to enjoy upon release but will age for many years to come.
