Wine Review: This clear and straw-colored Blanc de Noirs from Scharffenberger displays lots of random tiny and medium streams of bubbles. It opens with a moist bread dough and almond bouquet with hints of oolong tea. On the palate, this wine is light bodied with integrated plus acidity. It has a pleasant gentle froth. The mouthfeel is smooth, slightly creamy, and seamless. The flavor profile is a tart quince and oolong blend with notes of Anjou pear and pastry crust. We also detected hints of almond and walnut. The finish is dry, and its flavors and acidity drift away nicely. We would pair this elegant-styled Blanc de Noirs with baked dover sole. Enjoy - Ken
Winemaker Notes: Aromas unfold in layers of white peach, alpine strawberry, white cherry, citrus zest, and baked pie crust. On the palate, it’s electric. Zingy acid plays against the richness from four years on the lees, finishing clean with a salty snap.
