Wine Review: This clear and very very pale straw colored Brut Sparkling Wine from Galilee in Israel opens with a green apple and poached Anjou pear bouquet with hints of pepper and some toast. It also displays very tiny bubbles. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel presents a pleasant froth and is well-balanced, round, and very fresh. The flavor profile is a tasty lemon and chalky minerality blend with notes of lime and almond. We also detected hints of green tea and pear. The finish is dry, and its flavors and acidity linger nicely. We would pair this lovely sparkler with a creamy mushroom risotto. Enjoy - Ken, Karen, & Stuart.
