Wine Review: This hazy and very dark ruby colored Cabernet Sauvignon from William Cole opens with a black plum and blueberry bouquet with hints of chocolate, blackberry, and cedar. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, round, fresh, and mouthwatering. The flavor profile is a black cherry and pomegranate blend with notes of red licorice, stone dust, and tobacco. We also detected hints of blueberry, black tea, and oak. The finish is dry, and its flavors, acidity, and its well-managed moderate tannins drift away nicely. This wine is drinking beautifully now. You can certainly sip this wine on its own. With food we would pair this Cabernet Sauvignon with filet mignon with bearnaise sauce. Enjoy - KWGTP
