Wine Review: This clear and medium straw-colored Chenin Blanc from Pax opens with a ripe pear and chamomile tea bouquet with hints of apricot. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is balanced, round, slightly viscous, and mouthwatering. The flavor profile is an Anjou pear and quince blend with notes of chamomile tea and ginger. I also detected hints of lime zest and marzipan. The finish is dry, and its flavors and acidity are nicely extended. I would pair this Chenin Blanc with broiled scallops. Enjoy – Ken

Winemaker Notes: This bright crispy white opens with lifted aromatics of citrus, white peach, Meyer lemon zest, and crushed stones, threaded with chamomile and a finish built on wet marble. On the palate, it’s vibrant and tensile, with a sleek, mineral-driven core balanced by a gentle, rounded mid-palate. Flavors of green pear, quince, and citrus oil glide into a saline, mouthwatering finish. The texture is both energetic and lightly creamy, carrying freshness and depth in equal measure.
