Wine Review: This clear and pale straw-colored sparkling wine from Roederer Estate is excellent. It opens with random medium and small streaming bubbles. The bouquet features bread dough and almond with hints of herbal tea. On the palate, this wine is medium plus bodied with integrated plus acidity. The mouthfeel is balanced, round, clean, and fresh. The flavor profile is a stony minerality and lemon verbena blend with notes of green apple and ginger ale. I also detected hints of white pepper, almond, and grapefruit pith. The finish is dry, and its flavors and acidity are very refreshing. I would pair this sparkler with broiled scallops. Enjoy - Ken

Winemaker Notes: Delicate oak and pastry crust aromatics are highlights of the cask-fermented fraction of the wine. Taut on entry, this vintage displays green apple flavors, textured oak aromatics and vibrant acidity. The wine feels bright for a Blanc de Blancs style, showing purity and a long, focused finish. The Extra Brut dosage will help the 2021 Apple Alley Vineyard Sparkling age beautifully.

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery. We started with a 2023 Chardonnay. Then we tried a 2022 red blend. From there, we covered four Cabernet Sauvignon wines. Those Cabs were from the following vintages: 2018, 2022, 2016, and 2009. It was a terrific portfolio tasting. In this post, you can learn what is new with Cole, learn about the William Cole Winery, and read our reviews of all of these impressive wines.
