Wine Review: This clear and very very pale straw colored Brut Sparkling Wine from Galilee in Israel opens with a green apple and poached Anjou pear bouquet with hints of pepper and some toast. It also displays very tiny bubbles. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel presents a pleasant froth and is well-balanced, round, and very fresh. The flavor profile is a tasty lemon and chalky minerality blend with notes of lime and almond. We also detected hints of green tea and pear. The finish is dry, and its flavors and acidity linger nicely. We would pair this lovely sparkler with a creamy mushroom risotto. Enjoy - Ken, Karen, & Stuart.

Winemaker Notes: Gilgal Brut presents aromatic notes of green apples and flowers, layered with characters of citrus fruits and mineral plus hints of strawberry and toast. This non-vintage sparkling wine is fresh, bright, and fun to drink. Gilgal Brut is ready to drink now and is best enjoyed within about five years of release. This versatile wine goes wonderfully with appetizers such as mixed tempura, main dishes such as fish tacos with avocado salsa, or desserts such as summer berry shortbread.
