Wine Review: This deep garnet colored Cabernet Sauvignon from Dry Creek Vineyard opens with a fragrant boysenberry and lingonberry bouquet with hints of iced tea and cranberry. On the palate, this wine is full bodied with nicely integrated medium plus acidity. The mouthfeel is nicely balanced, very smooth, polished, and seamless. The flavor profile is a black currant and chocolate blend with notes of blueberry and Dr. Pepper. We also detected hints of toffee, cedar, and clove. The finish is dry, and its flavors, acidity, and its polished tannins are very nicely sustained. We would pair this Cabernet Sauvignon with dry-aged ribeye steak. Enjoy - KWGTP
Winemaker Notes: At first swirl, aromas of black cherry, spiced plum and cranberry sauce rise from the glass, layered with notes of clove, cedar, nutmeg, cinnamon, and hints of damp earth. Subtle tones of sarsaparilla, humidor and mixed peppercorns add complexity, alongside accents of dark chocolate, coriander, and toffee. On the palate, flavors of blackberry, black currant and boysenberry mingle with plum sauce, cocoa powder, and espresso, underscored by wet gravel, damp earth and savory spice. Firm young tannins provide a sturdy foundation that will soften and gain depth over time.
