Wine Review: This clear and brilliant light gold colored Chardonnay from Vina Cobos opens with a shy lemon verbena and white peach bouquet with hints of stone dust, pineapple, and peonies. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is nicely balanced, super smooth, and seamless. The flavor profile is a poached Bosc pear and stone dust blend with notes of lemon verbena and chamomile tea. We also detected hints of gentle oak, light mango, and light spice. The finish is dry, and its flavors and acidity fade away nicely. We would pair this Chard with chicken and wild mushroom ravioli with a light cream butter sauce or with a parmesan crusted tilapia.
