Wine Review: This translucent and pale garnet colored Cabernet Franc from Ravines opens with a sandalwood and plum bouquet with hints of wild strawberry and violets. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is balanced, round, and juicy. The flavor profile is an oak and spiced red plum blend with notes of stony minerality and tea. We also detected hints of nutmeg and strawberry Twizzler. The finish is dry, and its flavors, acidity, and its sticky tannins linger and last for quite some time. We would pair this New York Cab Franc with some pulled chicken or with a charcuterie board. Winemaker Notes: 100% estate, sustainably grown Cabernet Franc from our White Springs and 16 Falls Vineyards. Incredibly fresh and inviting with aromas of red currant, cranberries, and mountain herbs. The palate is pure and elegant, with notes of raspberries and hints of earth and spice. A perfect rendition of Finger Lakes Cabernet Franc, aged for a year in our 6-year-old, 2000-liter Austrian and Hungarian Oak casks.
