Wine Review: This midnight purple colored Cabernet Sauvignon from Alpha Omega is excellent! It opens with a blackberry and cassis bouquet with hints of chocolate brownie and cherry compote. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, lush and dense. The flavor profile is a cassis and blueberry blend with notes of mocha and black cherry. We also detected hints of green tea, oak, and graphite. The finish is dry, and its flavors, acidity, and moderate dusty tannins buildup a bit and linger. We would decant this Cab in the near term to polish up the wine. With food, we would pair it with a New York strip steak or with short rib ravioli. Enjoy - KWGTP
